Recipe: Molasses Drop Cookies

It's no secret that I love molasses -- a quick inventory tells me I've about 4 litres of different grades of molasses in my kitchen at this exact moment. This is a quick and easy drop cookie recipe that makes a moist, chewy, but not too sweet cookie -- just right for satisfying a molasses craving! Ingredients: In a large bowl, combine:

2 cups all-purpose white flour 1 1/2 cups buckwheat flour 3/4 cup white sugar 1 tsp ginger 1 tsp cinnamon 3/4 tsp salt

Stir to blend, then add:

3/4 cup butter, softened 3/4 cup fancy molasses 1 egg, beaten

1 1/2 tsp baking soda 1/2 cup hot milk

Combine the baking soda with the hot milk before adding it to the rest of the ingredients -- be sure to do this in a medium bowl as it will foam up quite a bit.

Add to the rest of the ingredients and mix well. Drop in spoonfuls on a parchment-lined cookie sheet. Bake at 375F for 11 to 14 minutes. Makes approximately 3 1/2 dozen cookies.
