Instant Pot Pineapple Pork

This kid-friendly recipe is a crowd pleaser. It’s lightly sweetened and full of colour, with lots of pork in every bite. It’s best served over rice, and is sized for an 8 quart Instant Pot.

Ingredients

1.5 kg boneless pork loin, cubed
30 ml (2 tbsp) cooking oil
3 sweet bell peppers (red, yellow, orange), diced
2 onions, chopped
60 ml (1/4 cup) water
30 ml (2 tbsp) cornstarch

Spice Mix

10 ml (2 tsp) salt
5 ml (1 tsp) black pepper
5 ml (1 tsp) smoked paprika
2 ml (1/2 tsp) cinnamon
2 ml (1/2 tsp) ground ginger
1 ml (1/4 tsp) cayenne

Sauce

540 ml (19 oz) can crushed pineapple (in juice)
540 ml (19 oz) can diced pineapple (in juice)
80 ml (1/3 cup) honey
60 ml (1/4 cup) soy sauce
60 ml (1/4 cup) brown sugar
30 ml (2 tbsp) grated ginger or ginger puree
15 ml (1 tbsp) minced garlic

NOTE: This recipe is designed for an 8 quart Instant Pot. You may need to adjust it for your pressure cooker.

  1. Blend together the Spice Mix. Sprinkle it over the cubed pork, and set it aside.

  2. Drain pineapple. Reserve the liquid.

  3. Combine pineapple juice, honey, soy sauce, brown sugar, grated ginger, and garlic to form a sauce.

  4. On Saute setting, heat up 15 ml (1 tbsp) of cooking oil. Saute onion and peppers until they start to soften. Remove them from the Instant Pot and set aside.

  5. On Saute setting, heat the remaining 15 ml (1 tbsp) of cooking oil. When hot, add the cubed pork and saute until meat is no longer pink. Add the sauce from Step 3.

  6. Cancel Saute. Put the lid on the cooker and change the setting to High Pressure. Set timer for 10 minutes.

  7. When it is done cooking, allow the pressure to release naturally for 10 minutes. Release remaining pressure manually. Remove lid.

  8. Add pineapple, onions, and peppers to the Instant Pot. Stir to combine.

  9. Dissolve the cornstarch in the water and add to the pot. Set the pot on Saute, and stir mixture for 3-5 minutes until sauce has thickened. Adjust seasoning and serve over rice.
